Green Smoothie Recipe ~ Zingy Kiwi and Coconut
If you read my most recent Food Diary Friday post you'll know that I've been feeling like garbage lately. I've had no energy and really felt like I needed something to perk me up.
I know that feeling tired and sluggish is just a normal part of being this pregnant, but what we put into our bodies has a powerful effect on how we feel too so I've been hunting down inspiration for healthy juices and smoothies on my Pinterest 'Health' board.
On the hunt for an appetising green smoothie I recently came across this one and adapted it to suit my taste. I'm not a huge fan of Kale so I swapped it for Spinach in this smoothie and added some coconut water for extra goodness. Packed with Vitamin C, K, fibre and antioxidants this drink is so easy to make and really makes you feel cleansed and alive. The recipe below is enough for two people, so I'd recommend halving it or sharing with a friend :)
Ingredients
3 Kiwis peeled and sliced
2 large handfuls fresh spinach
1 cup ice cubes
Half a fresh lemon squeezed
Half cup of coconut water
Fresh orange juice to taste
Method
Add all ingredients except orange juice to blender and process until smooth.
Add fresh orange juice to both sweeten and adjust consistency to taste. I used about half a cup- 1 cup in total.
It's literally as easy as that. Let me know what you think if you try this recipe. Also, as a note, it really does come out this green. This is something I find quite satisfying.

DeleteYeah smoothies are perfect for summers. I love to have a big glass of Green drink in evening daily rather than having a heavy meal. Its really a great way of losing weight in best manner.
